The French Baguette Cafe follows the central philosophy of Vietnamese cuisine in composing meals that provide a balance that benefits the body.

What this means is that certain foods that are considered 'hot' must be combined with foods that are considered 'cool.'

For instance:

  • Spicy foods ("hot") are typically balanced with sourness, which is considered "cool".
  • Seafood ranging from "cool" to "cold" is suitable to use with ginger ("warm").
  • Duck meat, considered "cool", is served during the hot summer with ginger fish sauce, which is "warm".

The five senses

The French Baguette Cafe also uses the Vietnamese rule of five for our dishes.

Vietnamese dishes include the five basic tastes, which are spicy, sour, bitter, salty and sweet. These correspond to five organs: gall bladder, small intestine, large intestine, stomach, and urinary bladder.

Another rule of five is the five types of nutrients in our cuisine: powder, liquid, mineral, protein and fat.

Next rule of five is colours, which we try to incorporate in every dish: white, green, yellow, red and black.

The last rule of five is the dish itself: food arrangement attracts eyes, sounds come from crunchy ingredients, spices are detected on the tongue, aromatic ingredients coming mainly from herbs stimulate the nose, and some meals, especially finger food, can be perceived by touching.
